Scoby Doo started in 2016 as a kitchen experiment in Amravati that would not stop fizzing. It is still brewed by the same person, from the same culture, in batches small enough to taste by hand.

Kombucha is sweet tea fermented by a living culture (the SCOBY) until it turns tart and fizzy. Here is exactly what happens to yours.
- 01 Day 1 Brew the tea Black and green tea, steeped strong, sweetened with cane sugar. The sugar is food for the culture, not for you; most of it is gone by bottling.
- 02 Days 1–10 First ferment The SCOBY goes in and the crock gets covered with cloth. Yeast turns sugar to gentle alcohol; bacteria turn that to acids. It gets tangy, alive and slightly fizzy.
- 03 Days 10–14 Second ferment We bottle it with real fruit: pressed apple, fresh ginger, pink guava. Sealed, the yeast keeps working and the bottle builds its own carbonation.
- 04 Day 14 Chill and deliver Into the fridge to stop the clock. Then into a box, still cold, and off to your door. Best within a few weeks.
Big tanks make boring booch
Industrial kombucha is often pasteurised, filtered, force-carbonated and flavoured with essence so it survives months on a shelf. Ours is alive, so it lives in a fridge and tastes like the fruit that went in. That only works at a size where one person can taste every batch.

The jelly disc that does the work
SCOBY stands for Symbiotic Culture Of Bacteria and Yeast. Ours has been fed every fortnight since 2016. The yeast turns cane sugar into a trace of alcohol and carbon dioxide; the bacteria turn that alcohol into the gentle acids that give kombucha its tang and most of its reputation. Nothing is added to speed it up.
